Ah so you're in Australia harlu. Yes, Jan is right - information on death certificates is not always accurate. I know of several instances where wrong parent's names were given on Australian death certificates. Often I suppose the children of the deceased are giving inforamtion about grandparents they never knew.

What does Joseph's death certificate say his father's occupation was?

This is a good first port of call:

http://www.freebmd.org.uk/cgi/search.pl

Have a fiddle and see what you can come up with. I'll have a look for the marriage too. (yes, it's there  :))

It's much more fun if you can find it yourself. Let me know if you need help with it.

We don't have his death certificate - we only found a snippet of info online this evening. But will probably purchase it in the next few days.

That was my first port of call and that is where I found the details of Joseph and Lucy's marriage. Tracing her line was pretty easy (found some interesting snippets  :D) but his side is hard.

but his side is hard.

Probably because he's George not Fred.  ;) Woolhouse isn't a very common name and maybe you should look for mistranscriptions too ...

So where did you get the name Frederick Charles from?  :-\

Ah I see. That'll be the name on the death certificate then.

(I may be wrong, but I think it's wrong.  ;D)

If I were you I would get Joseph's marriage certificate first - to see what HE says his father's name is. As a bonus you will also get Lucy's father's name if you don't already have it. Alternatively Joseph's birth certificate would be worth buying.

I think it's wrong too :D I agree that Joseph's marriage certificate would be the best one to go for first, then his birth certificate.
In case you don't know this is where you need to go to order certs when you've got the details from FreeBMD
