My grandfather-in-law, Michael Monahan, was born in Ireland in July 1861.  He emigrated to United States in 1879.  In 1885 he became a naturalized citizen.  He married "Mary" in 1887, who also had been born in Ireland in 1865 (I think her maiden name was Kelly, but am not sure) and emigrated either in 1868 or 1874.  In 1900 he lived on Nelson Street in Brooklyn, NY.  In 1910 he lived on Butler Avenue in Brooklyn, NY.  In 1920 he lived on St. Mark's Place  in Brooklyn, NY.  In 1939 he lived at 1139 E. 36th Street, Brooklyn, NY.  He and Mary had 7 children:  Mary born in 1888; Margaret born in 1893, Catherine born in 1896, Andrew born in 1899, Edward born in 1903,  Elizabeth, born in 1906, and my mother-in-law, Josephine born on July 30, 1907.  I am trying to find our where in Ireland they were born, and who their parents were.  I would appreciate any assistance.

You've lots of details to start with but most of the information you are looking for and need to start searching for in Ireland will actually be found in U.S. records.

Civil registration of births in Ireland started in 1864 so there will be no birth certificate for Michael (and possibly Mary). To search for church records, and any others, you will need to know where the family lived in Ireland (parish if not actual townland, not just the county or 'Ireland').

New York death certificates ask for parents' names, birthplace, etc. and you might get those details from Michael and Mary's certificates if the informants were able to provide the correct details.

Birth certificates for any of the children will list mother's maiden name so Mary's maiden name is simple enough to confirm and with that you should hopefully be able to get their marriage certificate (might list parents' names, etc.).

Italian Genealogy website has started adding N.Y. births (1901-1907 at the moment) but the only one I could match up from your list is Edward Monahan born 27 Apr.1902 Kings Co. If you do some searching with wildcards, etc. you might find Andrew, Elizabeth and Josephine listed.

Since it looks like Mary came to America as a child (born 1865 to U.S. 1868 or 1874 according to your post) it's quite likely she arrived with her parents and once you have details of her maiden name you can start searching in U.S. records (it's most likely they also settled in N.Y.) and if you are eventually able to get her parents' death certificates with their parents' names you'll be back another generation.
Away sorting out DNA matches... I may be gone for some time many years!

Aged 19 a Michael Monaghan aged 19 arrives in the US 30 April 1979
from Ireland on the Ship Wyoming aged 19 with points of departure Liverpool & Queenstown see www.castlegarden.org As you seem stuck could his birth year be July 1860 rather 1861. Is there another type of passenger list in existence

I would try baptisms and christenings  on familysearch.com
Eg however there are no July Christenings or  Baptism I think are not the same, so later christenings  for 1860 and 1861 might include for Monaghan spelling
