JOSEPH STOKER - missing death and missing on 1871 census

I've been tring to find Joseph Stoker on the 1871 census and also his death for some time. He was born in 1822. He appears on the 1861 census:
          RG9 97 F38-51 31 William Street, Regents Park, Pancras
Joseph Stoker   Head  Mar  39 Beer Retailer  Born Staffs Bilston
Sarah E Stoker  Wife   Mar  30                       Born Islip, Oxon   
and children

By the 1871 census Joseph has disappeared and his wife has taken over as the beer retailer:
          RG 10 204 Public House
S E Stoker       Wife    Mar  40  Beer Retailer Born Oxford Islip
and children

He has disappeared from the trade directory. I have searched long and hard for his whereabouts and death. I have a marriage certificate for his son John Thomas who got married on Sep 28th 1873 in Wisbech that states that his father Joseph is deceased. Why is there no head of family listed on the 1871 census?

I have found a Joseph Stoker in the 1891 census, which could be him with a new wife. do you think this could be a possiblity? That he ran off? Maybe that is why his son disowned him and said he was dead?  A lot of the information matches as well. Because his profession in an earlier census was a coach maker.

This is the same guy, but in 1881:

Lodging with the Archer family, but with lots of others too....

Also, I can not find this Joseph STOKES in the 1871 census or any previous ones.

Or on the brighter side, did his wife Sarah die between 1871-1881? Maybe he just remarried after then.

I shall keep looking though for Joseph in 1871...

I now have two family members that state father deceased on the marriage cert but I have later found them elsewhere.  So in both cases the father must have been disowned.

In one case the disowned father went all the way to Australia.

Thanks for that.
His wife Sarah E died in 1873.
I have never thought that he might have remarried or would have moved away from London. It's possible although he is still missing on the 1871 census.
I'll have a look at the census info to try and confirm whether it is the correct Joseph Stoker.

Joseph Stoker, coachmaker, full age, marries Sarah Eliza Dandy in London, St Pancras church 23 April 1848. Father given as Thomas Stoker. See London Marriages and Banns

Also, Joseph Stoker marries Caroline Alice Wing Jun 1882, Pancras

I will check out the banns. Are they listed on Ancestry? I don't think the marriage is the right Joseph Stoker as he later married up north.

Also, Joseph Stoker marries Caroline Alice Wing Jun 1882, Pancras

This marriage took place on 28 May 1882 at Christ Church, St Pancras.  The bridegroom was Joseph STOKER, 21, bachelor, furrier, of 25 Robert St, son of Joseph STOKER, coach builder (not marked as deceased, in contrast to the bride's father who was).

So perhaps this is the next generation?
