OK, seen the 1881.
Cant see them yet in 1871 - altho there is an older Thomas, also Maltster (retired) from the same Birthplace as your man - Chirton.
In 1861 there are no children with your man and wife Elizabeth (nee Tanner), and he's showing born c1827 (actually the same as the 1881 census). The unmarried Sister In Law staying with them provided the maiden name clue and leads to this marriage:- (it fits with her birth place shown in the census I have looked at)
