Ambley:    Yes I have them in the 1871 census, and in the 1861 census I have them living at 30 Bath Yard, Sheffield. RG09, piece 3481, folio 69, page 6 under HENRY Slngsby aged 22yrs.

Toni:  The witnesses were John Flack (Clack?) and Mathew Plews.

Josey:   Yes his occupation was a dram flask maker

I've looked all along Copper Street in 1841 on findmypast's address search.

There is a Thomas Simpson aged 71 living next door to John Simpson 40, Charlotte 35, George 16, Sarah 13, John 11, William 7, Elizabeth 5, Charlotte 2.

I agree with Toni about a reason for Ann giving Thomas's name, but why is Mary Ann still Simpson on the 1871 if she married Thomas Anderson? And Knaresborough is some way from Sheffield.

I believe it was fairly common for illegitimate children to confect a father's name for a marriage certificate - I suspect I have had a case of that and WHAT FUN it is trying to sort it out!!
