The parish of St John Stratford was formed out of the parish of West Ham around 1844 althought he construction of the church was approved in 1832 and opened as a chapel of ease in 1834.

By 1865 the parish of Stratford had been further divided to create two further parishes

The Essex Records Office in Chelmsford has a comment next to Stratford which states "see West Ham until 1838".

You can check whether specific Essex registers are available online here: http://seax.essexcc.gov.uk/displayParishContents.asp, but at present for West ham All Saints there are only one set of 17th century BMD records online.
