There is a Joseph HUMPHREY age 26 in Plumstead, Kent in 1851. His birthpace is Rusby, Sussex. Lodging in household of Jeffery EVERNDEN, which happens to be a pub called the Prince of Wales - HO107/1590/305/31.
Don't think there is such a place and that it is more than likely Rusper. Only Joseph that I can see. None spelt as HUMPHRY.
In 1841 there is a Joseph HUMPHERY in Rusper aged 16. He is a male servant in the household of a Thomas SANCTUARY and family, unfortunately not at home - HO107/1097 6 Rusper Sussex 13 7 8

Puttocks Cottage, Rusper
Joseph HUMPHERY, head mar 53, Ag lab, born Surrey, Newdigate
Jane HUMPHERY, wife mar 50, born Sussex, Ashurst
Benjamin HUMPHERY, son 7, Scholar, born Sussex, Rusper
HO107/1648/F425/P23
Rusper is just on the Sussex side of the Sussex/Surrey border, and Newdigate is about 4 miles north in Surrey. Cowfold is about 10 miles south of Rusper, and Ashurst about 5 mile ssw of Cowfold. Beeding is probably Lower Beeding which is about 3-4 miles north of Cowfold. So Joseph and Jane marriage at Cowfold looks likely to be parents.
