Sorry I can't help with parish records but if you contact the Sussex Family History Group (SFHG) they might be able to help (You can find it via your search engine)
Sometimes parish records state what the father's occupation was on a baptism entry, more often than not, they don't. Very scant details & many don't even bother to name the mother. If the parish kept records (or if they've survived) of the banns for marriage you might get a few gleanings there as to occupation etc. Sometimes burial entries give a few details. It's really a question of looking, looking, looking! Start with the obvious, baptism's, marriage's & burials & see what tid-bits turn up there,
PS. Try Online Parish Clerks (OPC) search engine again, to see if anyone is covering the parishes you want.
