Quite a long post coming up!
I found a lot of Hulmes in the Didsbury parish register, more baptisms and burials than I could write down, but sadly very few marriages, so we still don't know what Ellin's maiden surname was. The Didsbury marriages are on the Lancashire Parish clerk site

To start with, confirmation of Ellin's burial, it reads "Ellin, w. of George Hulme of B, 27 Feb 1700 (1701 our calendar). The B stands for Burnage, not far from Didsbury.
Now I’m guessing that when you put George Hulme born 1634 you meant 1684 (as on your Cheshire posting)? There was this baptism:
George, son of George Hulme of the Foud, 16 Jan 1682(1683) also
Hannah, daughter of George Hulme, 2nd October 1685
No mother’s name.
And these burials:
Katherine, wife of George Hulme of Foold, 16 Jan 1682(1683). Possibly your George’s mother?
Febe, dau George Hulme, 1681
Peter, son George Hulme of Foulte, 31 Mar 1689
There were many Hulmes listed for Foud/Foold/Fold; also at Shaw Fold – possibly the same place. Shaw Fold Farm was in Heaton Chapel, which although next to Burnage is now in the county of Cheshire! So that might be where the Lancashire/Cheshire confusion arises.
Also these two burials show there were Hulmes at Shaw Fold and Burnage at the same time, using the same first names, so its going to be hard to disentangle which ones are yours!

I'm happy to go back record a few more Hulmes if you like, as I found a few names of interest to me in the same register. But there are so many Hulmes, it might be worth your buying the CD from the Lancashire Parish Register Soc. The Hulmes in this area go back to 1600, but no mention of the place name Tilston in these registers. Where did that come from?
