I did find a marriage for a George Adams and Elizabeth Miller in march 1/4 1838 Wareham,(free BMD) not too far from where "my"  G and E started their family.
I wish Betsey Delicate was mine,   ;D

I think that I can help you with George Adams' wife Elizabeth.
On 26 Jun 1838 George Adams married Elizabeth Burgess in St-Dunstan-in-the-West, London.
This is confirmed by the newspaper article which reads:
At St Dunstan's in the West, London, on Tuesday, Mr George Adams, of Gosport, to Elizabeth, youngest daughter of the late Mr Thomas Burgess, of Nursling Mills, near Southampton.
It also explains why their first born was named "George Burgess Adams"

I am descended from Thomas Burgess' elder daughter Mary

Hi Cathy

Not sure if you are still looking for this information by now, but the George W Adams (son of George and Elizabeth Adams) that you mentioned in your post is my Great Great grandfather. I have a book called Land of the Mountain and the Flood by Peter Chandler which provides some information about the son George W Adams. It records that George W Adams (the son)'s early employment in England was at the Eling Mill across the water from Southampton and that he left England for Melbourne when he was 21 years old and spent about two years on the Victorian Gold Fields so your comment about gold mining would be correct.
Apparently he worked briefly on the West Coast of the South Island of NZ in search of gold too before becoming a cellarman at a Brewery in Dunedin where he married Mary Wilson on 18 November 1868 at St Paul's Church in Dunedin (Archdeacon GH Edwards married them). So he must have left England about 1864 by what i can tell.
