Have you looked for them in the 1911 census?

Just put in the surname and select Co Meath...or Mayo...  http://www.census.nationalarchives.ie/search/
Available for researching parish records, graveyards etc in Co Monaghan.

Since most of the family seem to have gone to Australia in 1887 and Patrick who stayed behind seems to have moved to Jersey the 1911 Irish census won't be very useful at this stage.
Away sorting out DNA matches... I may be gone for some time many years!

Update:
I received the marriage certificate for Matthew Shaw and Catherine Coyle
1.11.1878 - Chapel of Mount Nugent, Ballyjamesduff, Oldcastle, Co Cavan.
Matthew was 22 and Catherine was 21. So approx year of birth 1856.
They both have Crossdrum as their residence at the time of marriage.

I was hoping to see if there were any middle names - no such luck
I was also hoping for Matthews parents/father - his name is also Matthew Shaw (no middle name listed)

I am needing matthews parents etc....and I have tried searching but my internet connection is really slow at the moment...If anyone is able to help me (AGAIN) i would really appreciate it.....Thanks......

Try searching in Griffith's Valuation for the families.  This was a nationwide household survey for taxation purposes completed around the 1850s (exact year varies by county) and SHOULD list the head of every household in Ireland (although Rootschatters have noted "missing" families occasionally).

There are a number of Matthew Shaws listed as head of household in Co Meath who are possible fathers for your Matthew, and a Bryan Coyle in Crossdrum townland, Killeagh parish in the same county who could be Catherine's father.  No Shaw families listed in Crossdrum though.
