If you are looking in 1700-1800 the best place would be to start at the Tythe Map which is normally 1840ish or the Inclosure Maps & Awards which could be a bit earlier. These NORMALLY give owners of land etc. From there you can look through the Manor Court Books to see the land passing hands.
You say you are looking at Norfolk. Well, depending where in Norfolk you are looking, you could be VERY lucky if it was part of an estate (such as Holkham) as their records are very good.

It is a fascinating and much overlooked source of information. (Manor Courts etc.)
