Jane's age of 23 on the 1891 Marriage document, which you have, fits exactly with the Death Registration in 1903 (aged 35).
One of the possible brides in 1905 was called Sarah Taylor. If the surname of Taylor is, as you suggest, already known to (or at the back of the minds of) older members of your family, this is probably her but it needs to be checked.
There is a possible birth for a David Gourlay in 1907 in Stockton.
I cannot, however, find a suitable Birth Registration anywhere in England or Wales for an Andrew Gourlay (up to 1920).
There is a James Andrew Gourlay registered in Helmsley in 1906 which is not too far away from Stockton but since they already have a son called James it seems unlikely that this one will be theirs as well. There is also another one actually called Andrew Gourlay registered in Newcastle in 1906 but he is a twin with a girl called Annie. Since you did not mention twins and since the first daughter was called Jane Annie I also ruled this one out.
Neither have I found another registration, in the same time period, for a female called (or whose name would familiarise to or sound like) “Ginny“. I wonder if "Ginny" might have been a family name for Jane Annie ?
If other members of your family are sure that there was an Andrew, maybe they went back to Scotland for his birth. Perhaps if you have a look in the Scottish records after 1907 (say) for such a birth with a mother possibly called Sarah Taylor something might turn up.
I could look after 1920 if you wish but it seems like a very long time after David’s birth, if he does turn out to be yours. It was the only David Gourlay registration that I could see anywhere in England or Wales between 1901 and 1920, so on the face of it, he looks like a good bet.
If I find out anything more I will let you know.
