In 1861, I found:
12 Strawberry Bank, Blackburn
TAYLOR, William Head 23 Draper b. Blackburn
TAYLOR, Gavinia Wife 19 Draper's wife b. Blackburn
TAYLOR, Frederick Son 2months b. Blackburn
TAYLOR, Elizabeth Servant 19 Servant b. Ireland
I've looked at the original census image, and Mrs Taylor's name has definitely been entered as 'Gavinia'!
Incidentally, this particular enumerator only entered a surname for the head of the household - i.e. William - in which case, the rest of the household are assumed to have the same surname, unless stated otherwise. I mention this because it does look a bit odd that the family's Irish-born servant was also called Taylor.
It's possible that the enumerator simply neglected to take the servant's surname. On the other hand, she might have been a relative of William's?
