James and Jane GEORGE 1871 census

I am trying to locate these two on the 1871 census.  I think I have found them on the 1881 but there is an additional child who was not on the 1861 census but is 25 so should have been.  It may have been Ester but noted down as Ernest and changed the gender. 

They lived in and around Heston. Would have definitely had a daughter still living with them - Sarah J aged 13

Many thanks.  This is what I found on 1861 census.....
 
james george 38yrs labourer born cranford middlesex
jane 34yrs wife born felsham middlesex
emma 11yrs daughter born heston
charles 9yrs son born heston
esther 5yrs daughter born heston
sarah.j 3yrs daughter born heston

And then on the 1881 census....

James GEORGE  60   Cranford, Middlesex, England   Road Lab     
Jane GEORGE    50   Feltham, Middlesex, England       
Ernest T. GEORGE Son U  5   Heston, Middlesex, England   Powder Mill Lab     
James GEORGE   Son   U   Male   19   Heston, Middlesex, England   Tinker     
John GEORGE   Son   U   Male   15   Heston, Middlesex, England   Tinker 

 I am wondering where Ernest T was on the 1861 as he would have only been 5.

Any help much appreciated.

1 Williams Place

James George, head, 42, Ag lab, b. N K (not known)
Jane, wife, 38, Ag lab (dittoed), b. do.
Ernest, son, 14, b. do.
Jane, dau, 8, b. do.
John, son, 5, b. do.

I can't see Ernest in 1861 anywhere. Possibly an enumerator's error  ???
