1861 Census Sheppey advice please

Please can anyone help- I have found my ancestors James and Sarah Harcup (spelled Harckup in the 1851 census) they have one daughter Susannah, and later had at least one Son Frederick born 1856 Warden Sheppey. 

They are all missing from the 1861 Census, I've tried searching in many different ways without success - Kent and whole of UK although I am pretty certain they never left Sheppey.  Could some pages be missing from the Kent Census?

Frederick and his family are in the 1881 census
Susannah now married to Albert Coultrip appears also, with her sister Ellen Harcup staying with them, all still in Sheppey

Any suggestions please

Thank you Casalguidi, but how on earth did you find that?  I put in Harcup, Harckup, Sarah and Frederick - and had no luck at all on Ancestry search

Hi Caroline

It often helps if you are familiar with the area but if you are using something like ancestry, it is often useful to omit the surname altogether and search for something like Fred* b1856 (+/- 1 year) and keyword sheppey then see what turns up.  There are many transcription errors in a lot of those indexes.

I never would have thought of leaving the surname out altogether - thanks again and I'll remember your tip.
