I haven’t been able to establish what happened to Edwin Emberly’s first wife, but my feeling remains that she was put into a mental institution, and that he started to have children by his ‘cook’, Annie Annetts, but never married her.
That hypothesis fits the known facts and explains why Edith Mary Annetts’ mother’s maiden name was Annetts (she never married).

I have searched for an entry for Emma A Emberley in the 1891/1901 censuses with little success. If she was in a mental home she would only be listed under initials.
There is an entry in 1901:
London County Lunatic Asylum
E. E., patient, married, 49, needlework, b London, lunatic
There is no real evidence that this is her though (all the other candidates seemed to be single or widowed).
