Looking for Sarah Jane Rixson (nee Pasterfield) in 1901.....she was born in 1864 Grays, Essex and is not seen with her husband and family in 1901..........George stating he is married as opposed to a widow

I would have thought she would be in Grays, Essex or in Gravesend?, Kent..........?

I've had this predicament before.

It turned out that the "missing" person was staying with her sister on the night of the Census. This of course is the critical problem - the Census lists the people present in the dwelling on the night of the Census, not the family. Hence you get visitors and in-laws etc listed.
MARTIN (Obviously) particularly Ashen and environs, Grays, Vange/Basildon
GIBBONS Stoke (Suffolk)
UNDERWOOD Tilbury Green nr Ashen not the one nr Grays
SEALEY/SEELEY Brockley (Suffolk)
LENNARD Bexhill/Hastings
