Hello Francesca, I too had ancestors who ran the Prince of Wales pub in Eign street, Hereford. According to the 1911 Census my Great Grandfather Mr Joseph Griffiths ran the Pub he was listed as an Inn Keeper and Horse Braker, along with his wife Elizabeth and 4 children, one of which was my Grandmother Annie Louisa Griffiths.
There were two other young men also listed there a Groom 16 and a Gardener (domestic) 14
