What do you have to confirm that William was born in Stannington in 1762 ?

so that says William was a native of Gateshead -   though that is the Bishop's Transcript rather than the Original Parish Register, so you'd need to also check the original to be sure the BT doesn't have an error.

In reality, I don't know if I have the correct William Soppet.
I have the baptism records for all three children, so I know I have their parents names correct.
The youngest son, James Gray Soppet is my GG Grandfather.
My source for John is from a transcript on MyHeritage. I see yours is from Family Search and is an image, which I am grateful to get.

I have the image of the Bishops Transcript for the marriage of William and Isabella.
What I really need is the Parish register, which should give William's parents names.
That would confirm whether or not his parents are Ralph & Margaret Soppet and therefore he was born at Stannington in 1762. This makes him 36 when married. (Isabella was 29)

The next nearest William I can find in age was born at Gateshead in 1752 to parents Thomas and Sydney which makes him age 46 if he married Isabella - a rather large age difference. (17 years)

There is a William Soppitt b. 1782 but in Queenhithe, London, which tends to rule him out.
I cannot go to Newcastle to look up parish registers because I am in New Zealand, so I'm a bit stuck.

I can help you with this.
You have two courses of action.
One is with Ancestry or the other is with Family Search + findmypast. In both cases you will need a membership with one or the other.

This opens the transcript. Here you will read:
This image is available:
•   At findmypast. By clicking here you will be leaving FamilySearch.org (fees and other terms may apply).
•   When using the site at a family history center.
•   To signed-in members of supporting organizations.
Plus a 'Sign In' button to Family Search. This is followed by another button “Visit Partner Site”.
The image of the census page that contains the transcript opens.
At the left of the screen is an arrow pointing left. Click the arrow until you arrive at page one where you will find the instructions to the Enumerator (Person who carried out the survey)

Second, in the case I presented in my original post using Ancestry.

This opens at the transcript. On left is a miniature of the page image. Click the ‘View’ button.
This opens the image of the Census page.
At the bottom of your screen is a small rectangular box that tells you where in the Census document the page is. It is image 14 with a light grey background. Click the 14 and enter a 1. A GO button appears – click it and page one will open.
Read the handwritten instructions beginning “Description of ditto . . . “. This tells the Enumerator where he is to collect household information from.

I would like to find what the actual address was and if the house is still there.

I live a couple of miles away, if you can get an address from a later Census, I can take a look for you.

A number of my ancestors lived (and died) in Gateshead Fell & Sheriff Hill, and I was born at the Hospital across the road

Regrettably, we can't use the next census because they had moved to Tyneside.
However, I will read the enumerators directions from the 1841 census and PM you.
I am a quite competent map reader and should now be able to establish the locality.

The map is fantastic.
I have only a vague idea of the area as I have only been through it twice.
I'm from New Zealand, but my wife is from Wingate, Co Durham.
Coincidence is a funny thing. We met in Hong Kong. Then I find that my family originated from quite near to hers.
