Somerset Lookup Requests / HEBDITCH - SOUTH PETHERTON?

Hi, I am trying to locate any information possible on a Mary Hebditch and her son George. They are a bit of a mystery. George ended up in Australia and according to his death certificate he immigrated at aged 10. I cannot find any records to show that Mary was ever in Australia though 10 is very young to be travelling alone.
His death certificate states Mary is a convict though this does not appear to be the case. His father is listed as Joseph Colbert (gentleman). Presumably Mary and Joseph were not married as George has the surname Hebditch from his mother.
I found a Mary and George Hebditch in the 1841 census. It shows that Mary was 16 when George was born making her birth around 1820 and George around 1836. The census address is Back Street Pitway South Petherton.
I think it will be difficult to trace what happened to Mary as she may have married again, or died in a jail somewhere.
If anyone has any records that show these two mysteries, I would be very grateful.
Regards
Lisa Fox
