Census and Resource Discussion / Emily Jenkin DAVIS - mysterious origins!

Please can anyone help trace the birth and/or census records (1841 & 1851) for my g-g-grandmother?
Family tradition has it that she eloped with my g-g-grandfather and was from a well-to-do family.
However, having tracked down their marriage certificate she lists her father’s occupation as tinplate worker.
Interestingly though, they each appear to have been slightly dishonest about their ages:

Emily Jenkin DAVIS born 1838 (possibly 11th March)
Married  at Clerkenwell Registry Office to James Jonathan CHRISTMAS who was 29 but gave his age as 27. She gave her age as 18 & her father’s name Robert DAVIS. Her address at the time was 1 St John Street Road, Clerkenwell.

I have traced the census records for her after her marriage but can find no trace of her before then.
1861: aged 24 born in Southwark
1871: aged 36 born in Blackfriars
1881: aged 44 born in Blackfriars
1891: aged 53 born in Blackfriars
1901: aged 63 born in Camberwell
1911: aged 74 born in Islington
Died 3rd January 1921 aged 82

I’ve got quite a few birth certificates now for several Emily Davis’s (below) but none seem to tie in.
Any help would be very welcome!

I don't know if anyone out there can help - I've pretty much found all of the census records as well as BMD for my g-g-grandfather James Jonathan Christmas except for the 1851 census.
I have tried everything I can think of, including name variants, to no avail. :-\

The following is what I’ve managed to find:
Born 7th March 1825 Blackfriars, Middlesex
Baptised at St Sepulchres 9th March 1825

1841 census – aged 16; occupation chaser
28th September 1854 married to Emily Davis at Clerkenwell Registry Office (gave his age as 27) occupation silversmith. Address: 7 Goswell Terrace, Goswell Road
1861 census – aged 36. Silverchaser. Address: 38 Euston Street, St Leonards, Shoreditch
1871 census – aged 40. Silverchaser. Bethnal Green
1881 census – aged 54. Silverchaser (goldsmith). Now living in Frome, Somerset.
Died 21st Sept 1887 in Frome. Buried on 26th in dissenters cemetery Vallis Road, Frome

Any help or suggestions would be most welcome
