I know she died around 1840 but who were her parents?

Cornwall OPC has a baptism for an Elizabeth Garland 6 January 1779 in Illogan, parents Peter and Elizabeth.

I don’t think that could be her parents because St. Hilary doesn’t connect nor do the name’s Richard and Margaret

well, there are no Garland baptisms in Illogan around the right time. You can check for yourself
