Is it possible to find out the regiment and where a soldier in the US army was posted? I am looking for locations for Ervin Bean 1909 - 1973 who signed up to the US military in 1940. I am trying to work out if he spent any time in Plymouth UK.

I would start here: https://www.birls.org/
and of course the US National Archives: https://www.archives.gov/research/military/ww2
If you know which state he was living in when he signed up lived in, there may be more records there.
Ancestry has some draft card records: Ancestry (https://www.ancestry.co.uk/search/collections/2238/?geo_a=t&geo_s=us&geo_t=uk&geo_v=2.0.0&o_iid=41013&o_lid=41013&o_sch=Web+Property). There are also some records on FindMyPast (https://www.findmypast.com/discover/military-armed-forces-and-conflict/second-world-war/world-war-2-allies-collection).
Another potentially useful site: WWII Research Center (https://wwiiresearchandwritingcenter.com/)
