There are two that you can link into Ancestry.

Roots Magic and Family Tree Maker.

Both will download the full Ancestry Tree together with all your linked media, images, citations etc.

You can work on your Ancestry Tree with both Apps and then Sync from Ancestry to the Apps.

When you cease to use Ancestry the full tree is there in the App.

Just about all family tree software is independant of Ancestry. It's just that some of them will link to the major websites IF YOU WANT THEM TO. (Of course they don't necessarily make it easy not to.)
I use Family Historian and for various reasons I still run Brother's Keeper as well.

Any of them will do what you seek.

Some are both Windows and Mac, Roots Magic certainly is.

It depends upon what you actually want other than a repository for your built tree.

Each App has its pros and cons regarding ease of use or otherwise, the charting ability varies greatly from what looks like a 90’s dot matrix print out to all singing and dancing yet still pretty poor.

There is a standalone charting App available.

There is also the ability to create books, again the features vary tremendously.

There is Legacy as well.

You can link this one to sites again if you want to, or keep it completely independent.

EDIT
Meant to say this one is now free as well.

I still like Brothers Keeper best. Used it for over 25 years.
TreeDraw is the best for charting.

Just to say that because Family Tree Maker will link to Ancestry you don't have to link it.

I run FTM totally independent of my Ancestry tree cos I like the format.

Perhaps it is worth pointing out that if you have or are considering a DNA test then having a tree on Ancestry will be a great benefit and if the tree is on this website software that sync’s with it is a highly desirable feature.

Just because a tree is on Ancestry it does not have to be visible to anyone else, mine are set as Private yet I have some 150 DNA Cousins and their branches on my Family Tree and these would not be there without me taking a DNA test.
