Title: Hearth Tax? or do I search something else?

Our village is trying to save our local very old pub. I have trawled through census and found 'Beer Seller' in nearly all of them. We need to go further  back (The pub is very old) and I was wondering about 'Hearth Tax'.
I have started looking but it appears I need to know the name of the person, rather than the name of the property. Is this right? Will it help?
Or
Can you suggest another route please.

Is there anything in the county archives catalogue?

Is it a listed building?

Is it mentioned in pre census directories?

Probate records such as Wills may help. Though it may be a hard search and costly for no reward.
