Our village is trying to save our local very old pub. I have trawled through census and found 'Beer Seller' in nearly all of them. We need to go further back (The pub is very old) and I was wondering about 'Hearth Tax'.
I have started looking but it appears I need to know the name of the person, rather than the name of the property. Is this right? Will it help?
Or
Can you suggest another route please.
Thanks

A few ideas
Assuming you are in England , check licences. Guide here
http://www.pubhistorysociety.co.uk/recog.html
Is there anything in the county archives catalogue?
Is it a listed building?
https://camra.org.uk/heritage-pubs/is-a-pub-listed-16
Is it mentioned in pre census directories?

Probate records such as Wills may help. Though it may be a hard search and costly for no reward.
