There isn't very much census information available for NSW :

-
Have you checked here? https://guides.slv.vic.gov.au/earlycensus/nsw
Have only had a quick glance and am not knowledgeable about Aust records, but my inclination is to say you won’t find George on a census. Hopefully others will be along who can prove me wrong

There is a George MONK at King St, Canterbury in 1891, with 3 males and 2 females in the household. Uncertain whether this relates to your George.
-
Probably not.
His death notice in 1893 says of Liverpool:
"MONK - On October 31, at his residence, Liverpool, George Monk, 77 years. An old resident of Campbelltown. See Funerals"
The Daily Telegraph 1 Nov 1893

And confirmed by friends of Phoebe Monk, invited to his funeral

Did George and Emma separate? Emma MONK appears to have run a boarding house in Bowral from at least 1887.

(Amelia MONK appears to be the daughter who died in 1909 at Bowral, mentioned in Emma's obituary.

There seem to be several men named George Henry Monk, and there is not enough information given in the opening post to work out who we are looking for.

If you looking for an address the birth certificate of a child in the relevant time scale should provide you with that.
