Have you looked on the Free BMD index between 1851 & 1861 for any possibles?
-
Is Mercy still in Chatham in 1861?
-
Are you sure the William born 1828 is the same one married to Mercy?
Only the William with Mercy in 1851 is born 1815 Canterbury and is still around in 1861.
Unless there are two William and Mercy couples of course.

That Mercy is a widow in 1871.
William Dennis death in Canterbury in 1870 age 51 which is older than your one born in Devon.
I think this is the one born in Canterbury with Mercy in 1851/1861.
They married in 1839 so must be another couple.

The British Army Worldwide Index 1851 has only one William Dennis stationed in Chatham. This man served with the 1st Battalion 60th ( King's Royal Rifle Corps ). the service number is missing from the record. In the British Army Discharges , 60th Foot , William Dennis , service number 2973 , of 60th Royal Rifle Corps is listed as died in Delhi 14 Sep 1857. He is also listed as " Died of Wounds " in British Casualties of the Indian Mutiny. These records are all on FindMyPast. There doesn't seem to be a death record in the Armed Forces Deaths. Could be your man.
