I was wondering if anyone could help me with interpreting the attached and give me some guidance on how to find out more information about my grandfather's time in the merchant navy?

Have you seen the other record for Morgan Jones birth year 1892 but with the same discharge number, so therefore the same man . You can look up the ship numbers to find out more about the ships he served on, and see if any crew lists survive.

I found him on Find my past, which is where I thought your original record must have come from.
Engagement 17 Nov 1923 Cardiff
SS Teespool ship No. 119888. This ship was owned by NE shipping magnate Ropner.

109221 on 12 June 1922
This was a steamer built 1900 registered at Falmouth Cornwall tonnage 1483 called "Penmount"
145644 on 5 Sept 1923. This is the "Uskhaven", built 1923, a 1474 ton steamer, registered at Newport. Built on the Clyde by Burntisland Shipping Co. As a general cargo vessel. First owner R W Jones &co of Newport Uskside SS Co. Ltd. Wrecked at Oxelosund on way to Hamburg 14 Oct 1939, carrying iron ore.

Morgan William Jones, b. Ystrad, Glamorgan 1892, Dis.A number, 999765, appears to have served as follows – note the cards from the Fourth Register of Seamen can contain mistakes and omissions.
It appears that Morgan W. Jones probably did not serve in the Merchant Navy beyond 1924.
109221 – PENMOUNT – 12.6.1922
145644 – USKHAVEN – 5.9.1923
127460 – CANADIAN TRANSPORT? (possibly) – 8.1923
119888 – TEASPOOL – 17.11.1923
The CR1 card was introduced in late 1913 and were usually completed at the Mercantile Marine Office (MMO) at the time discharge books were checked or issued.
The CR2 card was also introduced at the same time and provide details of individual foreign voyage engagement (start) details.

Thank you all - as I said this is research that is completely new to me, I'll now see what I can find out and maybe come back with further questions :)
