John Evans (Brewer) m Elizabeth Ellis in Wrexham 1846. Her father John Ellis.
They lived mainly at 18 Bridge Street.

So how come according to the GRO digital online copies of their five children's births, the mother's former name was Eddowes?

The five children are Mary, John, Richard, Rose Anna and Charles born 1847, 1850, 1852, 1855, 1858 respectively.

Have you found an Eddowes/Ellis marriage?
Perhaps she was born Eddowes but raised as Ellis.

What is her father’s occupation?
There is a baptism
Feb 17th 1827, Wrexham
Elizabeth Eddowes, daughter of John and Mary, Bank Street.
John is a Maltster - so that fits with the Brewing theme.

There is another Elizabeth Eddowes baptised 1829 - same parents but John’s occupation is a Carrier.
There is a child Ann baptised the same day.

Have now done quite a bit of research on the Eddowes family but am more puzzled by the Ellis connection.

I suppose it is possible that John Evans married an Elizabeth Ellis in 1846. She could have died almost straight away and then he got another Elizabeth pregnant (Eddowes) and they had their first child Mary in Holt in 1847.

Possible but highly unlikely.

John and Mary Eddowes are at 1851 2503/480/14
He is now a Coal Jagger.

John Eddowes married Mary Whitfield in 1826.

What is Elizabeth’s fathers occupation on the marriage?
Who were the witnesses?

As Osprey says, the Wrexham area1841 census is missing. I do have the transcriptions of the  listings of Wrexham town.   The original lists were found inside a book in a second hand bookshop. Clwyd FHS then  produced a booklet transcribed from the lists.

If you think they might be in Wrexham itself, I'll have a look for you.

Note - the Wrexham Town transcripts are the only ones available for the wider Wrexham area. There are many threads on here about this.

Al born County. 

No other information Bank street is in the same area as the various markets.  I knew the area well in my youth!

The names that I've listed on the 1841 transcript match the names on the 1851 that heywood refers to.

Gadget’s information shows an Elizabeth in 1841 with John and Mary.
Is she Elizabeth Ellis though?

It's the same family that you found in the 1851, heywood.  No suitable Elizabeth Ellis on the 1841 so far. 

Elizabeth is not with the Eddowes family in 1851.

Just checked the Wrexham parish records for burials.

Elizabeth Eddowes was buried 18 Nov 1837. She was aged 2  Listed as of Bersham - a mining township outside of the town of Wrexham.

Perhaps the marriage certificate information might help:
Father’s occupation; residence; witnesses.

If he was a farmer, the family were not likely to be living in the town of Wrexham in 1841 so are probably /not listed.

Is there an address for Elizabeth on the marriage cert?  The Wrexham RD covered a large rural hinterland.

Did Elizabeth sign the register herself?

I'm wondering whether, as it was a civil marriage, and she was perhaps not known to the registrar, the less familiar name, 'Eddowes' might have been misheard as 'Ellis'.

The witnesses were Griffith Tudor and Ann Williams
