Does anyone know if the MIs have been recorded? I am interested in any that may exist for the Blackburn (and variants) families.

You can search the whole county or limit it to Garstang

MI is the abbreviation for monumental inscriptions and I had hopes that the Blagburnes + variants were of sufficient standing to have had tombstones in the graveyard if not memorials in the church.
The dates I’m interested in run from the 1640s to the 1720s.

although St Helen burials at Garstang Parish - there are numerous abodes for those buried as Blagburne and similar spellings
ie - villages of abode as follows
Scurton
Kirkland
Claughton
Catterall
Wyersdale
Sandon etc etc
do you have any idea which village - abode your family were living ???
if you do we can narrow your search down :)

The Lancaster & District Family History Group have recorded the MIs and published a booklet. Their website gives a list of publications with an order form. You will need to order St. Helen's Churchtown (the historical name for St. Helen's Garstang).
I have bought several of their booklets (they have now covered many churchyards and cemeteries in north Lancashire) and have found them very useful.
