How can I find records or census of staff that worked on the Estate pre 1900’s

You could go through the censuses.  Some of my ancestors were housemaids/butlers/gamekeepers/shepherds  on  large estates. In-house staff were listed at the main residence and there would be gamekeepers houses, etc.that would be close by.

If you search the 1901 & 1891 (sorry amended) for a Hugh Robert Hughes b 1828, in district of Abergele, Denbighshire you will find Kinmel Hall and a list of servants.
Just noticed its Kinmel Park not Hall.

I've found some workers in the 1881.  Search in  Abergele, St George
