I'm stumped!
I have encountered a John Gardiner(Gardner) 1658-1705 from Stogumber, Somerset who married an Elizabeth and thus, my line continued. However I have seen a number of other family trees with an Elizabeth WHITE 1646-1686, others trees feature John's wife as Elizabeth SPENCER 1658-1686 from Bicknoller, Somerset. Now, the Elizabeth Spencer has an extensive, detailed family history dating back to French Royalty - obviously, it'd be cool if that were my line. I can only find 1 document that looks like John married Elizabeth White however.
Could he have married both? Please, I'm hoping someone out there has something to help me out!

Best advice I can give you is ignore the online trees. Use them as a starting point by all means, look at their sources (if any).
You say you've found a document linking John Gardiner to Elizabeth White. What is it, and is it an original document or a transcript?
Have you looked at wills for members of the Gardiner, White and Spencer families? Quite often a son-in-law gets a mention, or "kinsman".

Freereg records.
I guess this is the John you mention, this would make him 15 when he married, it was legal but unusual, unless he was born earlier.

The record states that John’s parish was Bicknoller.
I do not wish to confuse but have you considered the record below, which seems more likely given the baptism of Elizabeth White below. Do you know the names of their children?
John GARDENER Baptism 03 Jul 1644 Somerset Bicknoller : St George Parents Christopher & Susanna
An Elizabeth was baptised there in 1646 + 11 others in the county 1640 – 1660. Records in this period can be difficult due to the Civil War
Elizabeth WHITE Baptism 23 Jan 1646 Somerset Bicknoller : St George Parents – Thomas & Merab
There were 3 Elizabeth Spencer/Spemser/Spincer on Freereg in the period, none at Bicknoller.
I cannot find a marriage for her to John in the County.

I've already begun asking for documents or proof, because I can't in good conscience just add someone without having documented evidence (unlike some).
So I have a marriage document, the one you have found Nov 22 1673. So as of this moment, I'm inclined to go with WHITE being his spouse.
I can't verify children because the children of Elizabeth and John because they are listed the same, regardless for Spencer or White. What I have suggested is: John Gardiner 1674, Joseph 1675, Elizabeth 1677 and Thomas 1679.

I found the children you mention on Freereg, the original Parish Records may add the mothers maiden name but in England this is unlikely.
John & Elizabeth = children baptised Bicknoller
John GARDNER Baptism 24 Sep 1674 Noted as Baptised at Elworthy
Joseph GARDNER Baptism 09 Mar 1676
Elizabeth GARDNER Baptism 29 Nov 1677
Thomas GARDNER Baptism 26 Dec 1679
Thomas Gardener & Joan had children in the period, it looks like Thomas was the brother of John baptised 1644. Christopher Susanna had the following children (All on Freereg)

Elizabeth WHITE Baptism 23 Jan 1646 Somerset Bicknoller : St George Parents – Thomas & Merab
On the baptism of her siblings the mother is noted as Maud/e and the abode Weacombe.
I cannot find any connection between Gardener and Spencer?

I have no idea where they got the Elizabeth Spencer from.... ???
Perhaps someone added it by mistake and others just copied, assuming it was correct?
I'll look further into John Gardner baptised in 1644.
