Sorry, I would like to amend my last query.
How can I find out the maiden name of Catherine who married William Applin.
I found one, Catherine White married William Applin.
but I am unsure whether this is the right one.

I am looking for the marriage of Catherine and William Apling of
Bellows cross cranborne.
I would like the reference so that I can order the certificate.
Assuming the first son was born 1805. the marriage could have been aroung 1800+4.

Marriage certificates don't exist before 1837, so you will need to find another way forward; the Cranborne registers seem the best bet at first. What makes you think the Applin/White marriage might be right?
I noticed that in the 1851 census there is a William Aplin b 1805 Cranborne who looks like their eldest son. His first child is called Cecilia Burth? Aplin b 1832 Bere - it is difficult to read the name - so it just possible she was named after her grandmother who may therefore be Cecilia Burth. As his wife appears to be Amelia Bussell (b1808 d Peter and Mary nee Arnold) it just might be Catherine's maiden name. Perhaps it is worth looking at her future (freebmd/censuses) to pin down her name. I found William Applin married Catherine White 3 October 1804
at Cranborne in the Btitish Isles CD at the State Library.
This was the only match I could find of a William and Catherine.
I know I am clutching at straws.
I see on the 1841 census cranborne. that it says William and Catherine are in their seventies, the youngest child is 20. I realise that they rounded down the ages, Was it normal to have a child in their late years.

I don't think you are clutching at straws; the marriage looks quite likely.
Even assuming the ages are correct, which is not always the case, Catherine could be as young as 70 and Elizabeth as old as 24, so Catherine need only be 46 when Elizabeth was born. The register entries are pretty conclusive but William and Catherine would be 33-37 when they married in 1804, so I suspect the ages have been exaggerated on the census.
Presumably you looked for Catherine and William's birth on the CD? Showing that there is a Catherine White bc 1770 would strengthen your case, particularly if her parents were called the same as some of her children.
In an ideal world there would be a White will mentioning an Aplin, or a White family in the 1841 census with an Aplin staying.

You are right about the census ages being out, which I am sure you have come accross yourself in your research.
I came accross one Catherine White, born to a William and Elizabeth in Cranborne,
but the date is 28th Feb 1790. Their was also a date of 1780 under comment of which I do not understand.
My great grandfathers age changed on every census. and even on his marriage certificate and birth certificate. Even my grandfathers age was out by 6 years
on his marriage certificate. Maybe it was that he lowered his age because he was 42 and my grandmother was 21.

Not sure if this chat is still running, but (just to complicate things a bit), there is a William Applin, born c 1815 in Cranborne, Dorset, living in Southampton, Hampshire, in the 1851 census. He is a baker. I noticed him because my paternal family are Aplin (bakers and millers from Corfe Castle in Dorset), and he was living next door to my maternal Payne ancestors from Southampton.
