Is there a way to find out who owned farms / pubs in the nineteenth century please?

For a specific property, which you currently owned, you could examine the deeds.
Otherwise, maybe the archives and records office would be able to suggest something.

There is the England, Return of Owners of Land, 1873, available on Ancestry, but it only gives the acreage of land owned in the various counties. Are you looking at a specific location? If so where is it.

I'm looking at Dolfor Alehouse mid to late with century when I had ancestors there, and Upper Aldress farm same period .

You need the Tithe maps, they can be found on The Genealogist, a subscription site.

The tithe map for Church Stoke was made in 1840 you would also need the tithe appointment, this is the book which contains all the names and details as to owners of land/property. Both are available at the national archives Kew. They may also be available at record office Wales.
What date were your ancestors resident at the ale house?
