Title: Families missing from the Census

I am puzzled why I find whole families in certain censuses, and they seem to be missing from others, same for individuals. I guess that searching for the name 'Smith' doesn't help, but I do have place and date of birth for most individuals. Is this a common occurence?

I have yet to find my great great grandfather in the '81 and 1911 census. I have his wife and children but not him! Sometimes families were separated due to work or perhaps they were visiting another family on census night. Most will be there but they are often overlooked especially if there are inaccuracies in the names, place and date of birth.
