For reference here is Elizabeth and family in 1911- Elizabeth's listed as a widow which is why you can't find her husband in 1911-
www.census.nationalarchives.ie/pages/1911/Waterford/Tramore/Strand_Street/911747
1901- www.census.nationalarchives.ie/pages/1901/Waterford/Tramore/Strand_Street/1760575

A James Barry (pilot, Waterford) in 1901- but age 84 (born c1817)-

Looks like this same James Barry in 1911-

Well, at least it does seem to narrow down when William might have died.

Is that the correct James Barry? age quite a bit out from your original post.

If James Barry died in 1904 then it doesn't look like he was over 100 years old when he died- see here (https://www.familysearch.org/search/record/results#count=20&query=%2Bgivenname%3Ajames%7E%20%2Bsurname%3Abarry%7E%20%2Bdeath_year%3A1904-1904%7E&collection_id=1408347&birth_year0=1800&death_place0=8)

There's a 1915 death which could be him but based on the 2 census records I'd be careful about believing his age.

William Hayden born 29th Sept 1854, Tramore. Details of his Master and Mate certificates and of the ships he served on are available on Ancestry. (fee). If he died at sea it might be worth searching familyrelatives.com - marine deaths. These registers are free to view though you will have to search each quarter seperately.
As his wife was a maternity nurse, Waterford Archives in High St also hold various records from the maternity hospital in Parliament St. - www.waterfordcity.ie/departments/archives/pages/maternity.htm
Harveys Directory lists a James Barry, Pilot living at 16 Henry St. in 1877. - http://waterfordhistory2.tripod.com/1877_directory_h_l.htm
