I am aware of how the barracks and its occupants are listed by initial only.
However, what I do not understand is why the soldiers all give other occupations such as labourer etc on the census form. Were these jobs within the military establishment as they all lived in the barracks or were they part-time jobs they did.
The soldiers in question were part of a 3rd [Reserve] Battalion.

The soldiers did not give the details. A clerk in the office filled in the forms from the attestation and other records and he listed previous occupations because the form asked him to - http://www.census.nationalarchives.ie/reels/nai000564858/
The Adjutant would have checked it, and then the CO signed it. As can see in the example the clerk got it right about occupation, but wrong about only giving the initial of the surname.
