I know little of the heritage of my Grandfather Dennis (born 1922) he died in 1980 leaving no record of his past. Knowing only his fathers name and the area of his birth i found on the censuses his parents (Edward and Bridget) and his paternal grandmother (Ellen).
Their addresses according to the cenuses are as follows:
1901: - Ellen Dwyer (Edward’s Mother) – House 43 in Bewley Street (New Ross Urban, Wexford)
Edward and Bridget Dwyer – House 50 in File 2 Shannon Hill (Enniscorthy Rural, Wexford)
1911: - Edward and Bridget Dwyer – House 50 in St. John's Street (Enniscorthy Urban, Wexford)
any further help would be much appreciated...

Do you have a marriage cert for Dennis ?
That would confirm his father's name and also give his father's occupation and thereby help to confirm the census records you found.

we don't but we are pretty certain that the Edward on the Census is his father - the sons and daughter match up more-or-less with his siblings.

It's probably worth confirming that link with a marriage cert at some point... you dont want to spend a lot of time investigating the wrong family. With a name like Dwyer you also need to consider O'Dwyer as a possible variation.
Assuming those Dwyer families are the correct ones, what details are you trying to find out ?

Cheers for the advice I'll try to get on to that but knowing how my Nan was with papers I may be out of luck.

Starting with the 1911 census - Dwyer household 1911 (http://census.nationalarchives.ie/pages/1911/Wexford/Enniscorthy_Urban/St__John_s_Street/680737/)
The family are RC, all are Co. Wexford born and the parents are married about 11 years, so c1900.
The first step is to try to establish Bridget's maiden name. The best way to do this is to search for a birth of one of the children. The youngest child, or sometimes one with the least common name, is usually the best to search for. The town of Enniscorthy is located in a registration district of the same name, so that narrows down the area. (see the introduction link for the BMD Index)
There's just one good match for the birth of Edward jnr, so that might be the place to start :
Name: Edward Dwyer
Registration district: Enniscorthy
Event type: Birth
Quarter and year: Jan-Mar 1907
Volume : 4 / Page : 541
A cert for that birth will show details such as father's name and occupation, place and date of birth, mothers maiden name etc. Once you have a confirmed maiden surname the search for the marriage is much easier.
It might also be an idea to then search for a birth cert for Dennis to confirm that he is part of this family. This index record looks like it could be a possible match to your clues:

there's a possible cross match for the marriage of Edward snr and Bridget in the area around the right time :

Name: Bridget Cahill

This Bridget's marriage references (year/quarter, reg. district, volume & page) are the same as Edward's which mean they could have married each other. Several marriages appear on the same page, so it is possible to have a false match with common names.
This could be confirmed, or ruled out, based on a birth cert for Denis or one of the children listed on the census.
