I can see a William GIBSON b. c1896 Derby on the 1901 census with younger siblings Reginald and Constance, living in Buxton with their aunt Valencia Peacock (great name!) - is this the one?

We're not allowed to do 1911 lookups because of copyright issues, but the free index at http://fmpbsol.1911census.co.uk/ shows a James William GIBSON b. c1872 living in Garston, and a William Moore GIBSON seems to be in the same household.  However, James isn't in Garston (as far as I can see) in 1901 - there's a possible match with a soldier born Derby who is a patient in a military hospital in Aldershot - does this match his occupation on William's birth cert?

In order to go further, as and when funds permit, it would be a good idea to get a couple of certs - William's birth cert would confirm his parents' names and father's occupation (although you have that info already), and his parents' marriage cert would give their ages and occupations when they married, as well as their fathers' names.

Here's the reference for the marriage, in case you don't have it:

Marriages Jun 1895
GIBSON   James William
MOORE   Sarah Jane
St. Geo. H. Sq. 1a 935

A James William GIBSON, son of Paul GIBSON and Ann, was christened at St Andrew's, Derby on 27 Mar 1872 - this is on the LDS pilot site http://search.labs.familysearch.org/   This would fit the 1901 soldier, but you really need to confirm he's William's father first!

That was James when he married?

In that case the 1901 soldier looks right, as does the Derby christening.

I can't spot him for certain in 1891, but here he is in 1881, although his forenames are reversed.   (That's confusing, but not unusual - he may have been christened as JW but known as William, for instance.)

(Several of the children's christenings are on the LDS pilot site I mentioned above.)

William James, son of Paul and Ann, was christened in Derby in 1872.

The LDS pilot site has some likely children for him and Sarah Jane:

Richard Alfred GIBSON, christened Fairfield, Derbyshire, 2 Sep 1901

Edna Emily GIBSON, b. 30 Oct 1905 and chr. 21 Nov 1905 at St Michael's, Garston

Elsie May GIBSON, b. 15 Sep 1909 and chr. 12 Oct 1909 at St Michael's, Garston

(Mother's maiden name not given, but the time and place are right.)

Free BMD http://freebmd.rootsweb.com has the births of 2 children with the surname GIBSON and mother's maiden surname MOORE in West Derby district:

Herbert H GIBSON, Mar Q 1912  (W.Derby 8b 1292)

Walter W GIBSON, Jun Q 1913  (W.Derby 8b 1336)

To "fill in the gaps", you would need to buy a few credits for the 1911 census, or use the advanced search facility on the free index to find people with the surname GIBSON living in Garston in the same household as James William.
