Hi Lyn

If you haven't found her yet 1861 Census is online here http://www.1837online.com/Trace2web/ it is a paysite.  I looked at the index and there are a few good possibilities. 

Also if you find her in 61 it will give you an address to request an 1851 lookup.

I'm doing a bit of housekeeping and wondering if this older request has been resolved in the meantime or you are still looking for the information?  If the latter, do you have any further information to hand?
