I've probably ballsed this up being a newcomer, but I am very interested in any 1841 or 51 census information for the Thomas Saunt that you mention. I cannot seem to get beyond this relative to his parents and siblings. I would appreciate any help and guidance on where to go next as I already have gone half "Web-blind" with the plethora of sites after my business!
Any thoughts?

I was going to advise you to post on the Leicestershire Board but I see you have already done that so all you have to do now is cross your fingers,make a wish and wait for a good fairy to appear ;)

I wonder what my John Smith was doing in the same house as your rellie? I suppose it is possible that they were related in some way - perhaps Sarah was John's Sister? Maybe we will find out one day!
As you say you are new to this I will tell you what I would do....
I would apply for his marriage certificate or birth certificate (if he was born in 1837 - but the date could well be a little either way).
His marriage certificate will give you his father's name and occupation - and then you will be a step further back. Then you will be down to looking for his birth in the parish records - if you live near the records office that will be easy - if not a little harder!
I guess you have had a good look on the Internet at various sites. Is he on the IGI for instance?
If you want details for 1841 and 51 census, I would put a message on the board asking for a look up for your man - his name is not too common unlike John Smith!
Hope you find your man - If I come across anything else about him in my searches, i will certainly let you know!
