Hi All
I have the following families from Athboy Meath on the 1911 and 1901 census

Mary wife b 1874
The have the following children between the 1911 and 1901 census
Maggie Callary 1894

Mary Callary 1899
Eugene Callary 1900 Died b4 the 1911 census
Owen Callary 1900
John Calary 1902
James Callary 1904
Mary, the wife of Owen Callary I believe was Mary Bellew they were married about 1893,
Here is her family
Margaret Bellew 1846 widow in 1901 census and cant find her in 1911
Richard Bellew 1879

Can anyone tell me how to go any further back on these two families as i'm not use to Irish records. and also are there any other census records.

1901 is the oldest surviving Irish census.
Probably your first step back would be to look for the marriage of the parents (Owen and Mary). The simplest way to do this is to locate a brth cert for one of the children to confirm Mary's maiden surname, and then search for a marriage on the BMD Index between them.
See : Introduction to Irish Records (http://www.rootschat.com/forum/index.php/topic,442233.0.html)

I have a birth certificate (copy) for Mary Callary 20 May 1897 Athboy, Meath. She is my Great Grandmother. If you have any information as to her immediate and extended family I would be interested. Although I note the birth date of the Mary Callary on your list does not match.
