I have her parents as
William Castle born before 1788 in Herne, Kent died 29 Feb 1868 in Herne, married to Susannah or Hannah born 1790.
I'd be glad to have any more details about her parents, especially their marriage, please.

I have Herne PRs, but not much to report I'm afraid.
I've found a William & Hannah CASTLE in Herne with six children, but no Sarah, however this couple had Elizabeth Sarah baptised 19th Nov 1826.
All the CASTLE baptisms in Herne were in the 1800s, so nothing for William.
No marriage for William & Hannah, or Banns called.
Two Burials:
29th Feb 1868
William CASTLE age 73, of Herne
13th July 1869
Hannah CASTLE age 71, of Herne

I wonder if you would kindly give the names of the subjects siblings, as this would give another strand to identify her. Belt and braces, so to speak.
But Herne looks such a tiny place on the map that it would be unlikely that there would be two families with these details?

Apart from Elizabeth Sarah, William & Hannah CASTLE had the following children baptised in Herne:
1825 11th Aug John
1825 21st Aug John (Note: Repeat of previous entry)
1828 13th Oct William
1830 22nd Aug George
1840 5th Apr Emma Hannah
Notes against all say Herne (Labourer)
Given the gap between George & Emma it's quite likely they had more children baptised in another parish.
The other CASTLE couples were Thomas & Isabella, William & Emma, William & Esther, William & Hester, Charles & Emma, Edward & Hannah, John & Rosina, & Sarah (single women)
Earliest baptism 1818, last 1869.
Only one CASTLE marriage before 1837, that was in 1828.
Six marriages after 1837
A bit more info that might help (or not ;D ) in case any of it fits in with what you already know, at least it shows the CASTLEs were spread across this part of Kent.
There's a note against William & Emma to say he was a Shoemaker.
There are a number of CASTLEs in Upchurch, which is about 21 miles from Herne & there's a John there who is also a Shoemaker.
There are also two couples, in Upchurch, with the surname CASTLE LARKIN, one man is also a shoemaker.

The very useful information from Betty of Kent has made me realise that I have been mistaken about subject Sarah CASTLE born Herne and that my gt grandmother is another Sarah CASTLE. Here are the facts taken from her marriage certificate and the birth cert. of my father's father.......
1850 Oct. 12th married George STRUDE, labourer residing at Reculver, Kent.
father David STRUDE, labourer.
spinster Sarah CASTLE, residing at Eastry, Kent.
father William CASTLE, labourer
Both made marks X.
witnesses Esther HOLMES & Susanna KENNETT signed.
1859 Dec 7th son Charles George STROUD father farm labourer
X mark of mother Sarah STROUD at Harndean, Eastry, Kent.
Registered on 31st. December, 1859 at Sandwich Registration District.
Children who appear on the census 1871 at Eastry, Harndean, Parish of Canterbury & Sandwich.
Ann 15, George 13, CHARLES 11, John 9, Henry 6, Eleanor 2, all born Eastry.
Can anyone help me find the right SARAH CASTLE, please.

I think your Sarah CASTLE is the daughter of the William and Hannah of Herne as above ............... baptised as Elizabeth Sarah CASTLE. In the 1841 census she appears with the family of William and Hannah as "Sarah" age 15 HO107/467 book 6 folio ? page 16
