I have this record from Scotlands People of my gg grandmother from the 1841 census:
BOWMAN REBECCA F 13 BARONY GLASGOW CITY/LANARK 622/00 081/00 005
What I assume were her parents were shown as Hugh and Agnes Bowman b 1807. Both I believe were born in Ireland although Rebecca was born in Glasgow. I have a possible sighting of Agnes in the '51 census but of Hugh, nothing. Any possible death records or any other records (including marriage) welcomed.

Unfortunately, this is all before the start of official registration from 1855. If Hugh died before this date, you may not find any record of it in the Old Parish burial registers (have you checked on Scotlands People?).
I can only see one birth for their children on IGI:
MARGARET BOWMAN Birth: 25 MAR 1825 Maybole, Ayr
Parents: HUGH BOWMAN and AGNESS FULTON
And they also looked to have married there, going by this IGI entry:
HUGH BOWMAN and AGNES FULTON
Marriage: 23 MAY 1824 Maybole, Ayr
Old Parish register entries have often very little info, normally no more than shown above but you don't know until you look on SP's OPR index and images what information is there.

Have you got the full entry for Hugh and Agnes in 1841, their ages look a little different:
Hugh Bowman 30, HLW b. Ireland
Agnes Bowman 40 b. Ireland
Margt Bowman 15
Rebecca Bowman 13
Mary Bowman4
James Bowman 1 Month
Address: Bridgeton Main St Cogaris Court No 52, Barony
You then have the entry in 1851:

Margt Artheson 26, wife b. Maybole, Ayr

Agnes Bowman 53, mother in law b. Ireland
