At the 1861 census John Charters is a Publican in what looks like 61 House, Banastre Street, in the Vauxhall District. I would be grateful if anyone could add more info to this please.

Hi Michael !
Not an answer to your question I'm afraid ... but a couple of snippets for background ..... :)
Banastre Street used to run Eastwards from a junction with Vauxhall Road. On modern day maps it is now called Leeds Street.
Back in the 19th century, Leeds Street ran to the West from Vauxhall Road, towards Princes Dock, while Banastre ran to the East. It looks as though it was decided to extend Leeds Street, and lose the name Banastre altogether
Banastre Street
Named after General Sir Banastre Tarleton MP, who fought in the American war of independence. Tarleton defended the slave trade in Parliament

That address ( 61 Banastre St) was a pub by the name of The Grapes ( Gore's 1860 Directory lists John Charters, victualler, there).

According to the 1861 Census my NOLAN family were at a pub in Banastre Street, I believe no. 34. Does anybody know anything about this?

34 Banastre Street seems to have been the original location of Paddy's Market - St Patrick's Bazaar http://www.scottiepress.org/sr2003/sr2003.htm
