You'd need to find out Catherine's maiden name to tell for sure (off one of the children's birth certs)
FreeBMD has a marriage
Sep 1871 Newcastle 10b 205
John Taff - Catherine McAnally
And there's a John Taffe, labourer, age 22, b. Ireland
lodging in Elswick in 1871 RG10/5077 14 22

Sorry, I don't know anything about Irish research at all (but for some reason I have a feeling birthplace 'Ireland' won't be much help :P)

Dizzy,
The English census enumerators were only required to complete the "Where Born" column with "Ireland" , without entering an Irish county. ( ditto for Scotland)
However some enumerators squeezed in a county ( if you are lucky) So you should try to trace their record on every census that they would have appeared on.
Also a bit of research via Google will tell you if the Irish surname is heavily rooted in a particular county ( as long as it isn't a name like Murphy, Gallagher etc)
In the 1850/60s many Newcastle's Irish immigrants were from the north-west counties of Mayo, Sligo, Roscommon etc.
