Chrissey,
In all of Ireland there was just one Crombie shown in the Griffith's Valuation 1848 - 1864 and that was Esther Crombie, Co. Westmeath, Civil Parish Ralugh, Townland of Montrath.
There was also just one Crumb at the same time, and that was James Crumb, Co. Westmeath, Civil Parish Rathconnell, Townland of Macetown.

Chrissey,
Have you been able to obtain her poorhouse records? I have had some success finding out the origin of my Irish ancestors who applied for poor relief because they stated their place of birth and/or marriage.
Did she marry in Ireland, then have children in Scotland? If so the children's birth registrations should have her place of marriage, if she had a child in 1855 but then there is a gap of a few years where they didn't have this detail on the registrations, then the detail is again included from about 1862 onwards.
Also I have Irish Crombies in my tree. They came from County Down. You might try looking for another variation of the spelling: Crommie.
