I do understand your caution but as this one was was baptised in Rogate, I would think she is a fairly safe bet.
Ancestry only has marriages from 1837, the only way to be 100% sure would be to look at the Rogate Parish Registers.

From the Sussex Marriage Index
Rogate, West Sussex, 18 Oct 1821
Thomas PETTER, bach
Sarah GOSDEN, sp botp (B) wcop
Witness wit; Ric.G.; Eliz.CAPLIN
The witness Ric G could be the Richard that Patrish found, father of the Sarah baptised 1800, then again if she was born early 1800, by Oct 1821 she would have been 21 and not needed her parents permission, which is what wcop means.
A look through the parish records is on the cards.

These two look like the witnesses.
From the Sussex Marriage Index
Rogate, West Sussex, 28 Sep 1824
Richard GOSDEN, bach IOW Arreton
Elizabeth Ann CAPLIN, sp otp (B) wcop
This looks a possibility for the Richard and Ann named as parents of the Sarah bapt 1800
From the Sussex Marriage Index
Treyford cum Didling, West Sussex, 11 Apr 1791
Richard GOSDEN, of Rogate
Ann BRIDGER
There was also a Richard of Rogate married in 1779, but he was 50 and his bride was 39, so not likely to have a daughter c1800

Richard who married Elizabeth Caplin, was in Rogate in 1841, 51, 61. Born 1794 Rogate, which fits with a Richard baptised 1793, son of Richard and Ann, parents of Sarah born 1800.
